Nothing says Summer just like the combo of Mango and Coconut. It’s like a sunny, tropical punch within the face! For a tender, pillowy punch, why not make cupcakes with these two Summer flavour heroes! I did and it felt GREAT!

Recipe –
For the Mango Curd…
5 egg yolks + 1 complete egg
110g sugar
1.5 lime juice
110g pureed mango
60g chilly chopped butter

For the cupcakes…
125g self elevating flour
125g caster sugar
1/Four tsp bicarbonate of soda
25g dessicated, toasted coconut
zest of 1 lime
135g tender, unsalted butter
2 lg free vary eggs
2 tbsp coconut cream

For the coconut swiss meringue buttercream…
Three lg egg whites
225g caster sugar
300g very tender unsalted butter
Three-Four tbsp coconut flavour + coconut extract if you would like

Toasted coconut flakes to embellish!
